A big Christmas master class, where I will show and share with you different methods of making mousse cakes: what, how and why . I'll show you basic recipes, teach you how to make complex cakes and different decorations.
On the course, I will prepare 7 completely different pastries and a variety of decoration:
1. Pastry "Christmas ball" - sponge cake, crunchy layer, mango-passionfruit cremeux, mango-passionfruit confit, caramel mousse, mirror glaze, chocolate decor
2. Cake in a box - crunchy layer, sponge cake, whipped sparkling jelly, tangerine confit, sparkling wine mousse, mirror glaze, chocolate decor
3. Banana cake - chocolate sponge cake, crunchy layer, caramelized bananas, caramel, milk chocolate mousse, mirror glaze, chocolate decor
4. Pearl cake - crunchy layer, lemon sponge cake, mint mousse, lime-mint confit, mint mousse with white chocolate, neutral glaze, gold coating.
5. Cake Hat - crunchy layer with cinnamon, chocolate sponge cake, orange confit, orange whhiped ganache with spices, chocolate mousse, chocolate velor.
6. Cake Heart - crunchy layer, biscuit with raspberries, raspberry-lychee confit, raspberry mousse, chocolate velor.
7. Spheres cake - crunchy layer, sponge cake, passionfruit cremeux, mango confit, mango mousse, neutral glaze.
This master class is suitable for beginners, as well as practicing pastry chefs. I will talk about the basic features of working with mousse cakes, desserts, various coatings and the problems associated with them.
